Homemade Tomato Sauce

 

 

3 Organic or homegrown large tomatoes 

2 cloves fresh garlic 

1/4 cup diced yellow onion 

Pinch of salt

Olive oil 

1.Boil tomatoes to soften and peel off skin.

2. Chop the 3 tomatoes into small chunks, keeping the juices.

3. Dice the 1/4 yellow onion and mince the 2 cloves of garlic. Heat a small pan over medium heat and add a light drizzle of oil if desired. Sauté the diced onion for about 3–4 minutes until soft and slightly translucent. Add the minced garlic and cook for another 30–60 seconds until fragrant.

4.Add the chopped tomatoes and their juices to the pan, along with a pinch of salt. Stir well and let the mixture simmer on low to medium heat for 10–15 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.
Mash lightly with a spoon for a chunkier texture or blend for a smoother sauce. Taste and adjust salt if needed, then serve warm.
